Met nog enkele zeldzame uit 2020. Het is beter deze te vergeten. Het zijn bijna allemaal Franse wijnen, met een twaalftal nieuwe releases. Languedoc-Roussillon biedt het merendeel van de ros\u00e9s, die toegeven aan de &#8220;grijze&#8221; trend. Een beetje Corsica, te weinig Provence en klassieke Rh\u00f4ne-wijnen met de Cuv\u00e9e Royale 21 van Tavel en \u2026. In de kelder wordt, v\u00f3\u00f3r de vinificatie, die tussen 14\u00b0C en 16\u00b0C plaatsvindt , een koude schilmaceratie op de druiven uitgevoerd, om zoveel mogelijk aroma&#8217;s te onttrekken. Een ros\u00e9 met veel frisheid en mineraliteit. <strong>ROUGE de 2019<\/strong> met 50% grenache en syrah, mourv\u00e8dre, en cabernet sauvignon. Traditionele vinificatie in betonnen kuipen met temperatuurcontrole op maximaal 27\u00b0C voor de fruitaroma&#8217;s. Een explosieve grenache van zwart fruit, specerijen en aroma&#8217;s. Ros\u00e9 de &#8216;saign\u00e9e&#8217; en de &#8216;pressurage&#8217;. Een selectie van jaargangen gerijpt in acaciavaten! Een krachtige wijn, met een Bordeaux-gevoel, met een vette toets dankzij de rijping. Een gastronomische ros\u00e9 die even goed bij gevogelte als bij couscous past.
